Back in 2013, Chiara and Niccolò made the bold decision to follow their dreams and start raising goats and making cheese in Pratomagno, in the Tuscan mountains. Now in their early 30s, their project has expanded to be much more than just a job for them. They have 70 goats, five cows and a facility that meets EU standards, they have hired a young collaborator from Gambia called Sulayman and they have fostered a Romanian girl named Geanina. The experience of these heroic young people shows that producing natural cheeses is possible but also that a return to this way of production demands more time and more experience and means more hard work, more risks and more isolation. But they are holding out not just for themselves but also for us, because they are keeping an extraordinary heritage alive: a heritage of skills, landscapes, relationships with the livestock and traditional techniques.
Agron and Sandra are a rare breed, refusing the shortcuts of modernity and instead tenaciously continuing to make cheese with respect for naturalness, tradition and taste. Even though this means hard work, risk, disputes and isolation, they continue to hold out. Their story is one of courage, of integration and redemption, of trust and a spirit of acceptance and welcome. Agron left his native Albania to find a new life and a new career in Italy, while Sandra has invested in her local area. Now the two of them are interpreting an ancient cheesemaking tradition that belongs not only to Sicily but represents a heritage shared by all the Mediterranean cultures. This film looks with hope at the future of humanity, painting a vibrant picture of a country that is responding to crises and deep changes with a new and revolutionary vision of the world that starts from the bottom up.

Like
many other young people, Emanuela left her small home town,
Borgosesia, first studying economics in Pavia and then making her
life elsewhere. But in her 30s an encounter with Livio changed her
life. Livio is a herder who spends the summers high up in the Alpe
Lincée together with his mother Angelina, raising cows and goats and
making Macagn cheese. Through them, Emanuela discovered the existence
of another world, from another time, where the importance of family
and people’s ideals, humility and genuinity have remained unchanged,
in a reality far from the bustling cities. Eventually she married
Livio and they began working together. For someone like her, not born
into this world, the transition has not been easy, and required time
and great care. But with every day that passed she became more and
more convinced of her choice. Now Emanuela is 47, with two teenage
children, Marco and Greta, and takes care of the business
administration as well as caring for the livestock and making cheese.
Livio milks the animals and also works as a woodsman. Stories like
hers give hope, showing how some young people are choosing to
dedicate their life to continuing the work and preserving the
knowledge of previous generations, helping to protect the land on
which they live.
The Gortani family spends the summer high up in the Carnic Alps, in the Malga Pozof. The family had already been making Çuç di Mont cheese for generations, then 20 years ago they transformed an abandoned building into a warm and welcoming dairy and holiday farm. Renato and Michele firmly believe that their livestock act as the custodians of the environment. Grazing on Alpine pastures allows the animals to feed on a unique mix of plants, essential to making quality cheese, but is also vital to their well-being and the well-being of the local area.
